How do Bitcoin mining pools typically handle payout frequency versus thresholds?

I used bitcoinj for mining in 2011 on a windows computer
And my p2sh addres, so it is pre bip0016
How does my ecdsa signature that i have work with that?
I know how to convert it to raw json to get a r and s (the r starts with 00 to make it positive)
both are small just a few bytes/ hex karakters

How do I use it to make a transaction to a new taproot or bech32 address that I own?
